Pumpkin & Ginger Soup (Vegan)

You can't beat a soul warming Pumpkin & Ginger soup. It's great for when you're not feeling 100% or a perfect lunch option for a cool winters day.

Ingredients

  • 500g Pure Foods Roast Pumpkin (Pureed)
  • 500mL Water
  • 2 ½ Teaspoons Vege Stock
  • 1 ¼ Teaspoons Ground Ginger

Directions

Simply place 500g of Pure Foods Roast Pumpkin (Pureed) into a pot. Add water, stock. Bring to the boil whilst stirring. Then serve!

Top Tip

For a single serve soup just use one of the 100g Roast Pumpkin pottles with the same ratios as above (1:1) and use a microwave to heat. Finish off the soup with a dollop of sour cream and cracked pepper - delish!
