Cauliflower Gratin - Puree - 100g

  1. Heat the kettle to 80°C
  2. Add the Canola Oil, Butter & Salt
  3. Add HOT water to the kettle and then add ALL the Cauliflower
  4. Slowly pour over the Milk Powder after all the Cauliflower is in the kettle
  5. When the Cauliflower appears to soften, add the Pea Protein in SLOWLY so that it doesn't clump.
  6. Add the Citrus Pulp & Endura to the kettle - mix until all combined.
  7. Pasteurise :)
