  1. Add the Water and Salt to the kettle and heat to 80°C, start the kettle stirring at speed 10
  2. Add the Peas to the kettle & the Canola Oil - Cook for only a few minutes ! Make sure that there are no clumps of peas anywhere in the kettle that are frozen
  3. Once at 70°C Add the Citrus FibrePea Protein - mix until just combined
  4. Add the Endura SLOWLY to the kettle so that it doesn't clump
  5. When the temperature is back at 80°C (or just before pasteurisation) add the Mint
  6. Pasteurise :)
